I prefer to use the dough cycle, then transfer the dough to a loaf pan and bake in the oven. I hate the hole in the center, and went looking for information on how to take out the mixer paddle. On the gluten-free setting, it has a 2-minute cycle, immediately followed by an 18-minute cycle for kneading. It does not have a rise cycle. All the rising is during the baking cycle. So right after the 18-minute cycle, the paddle can be taken out, from what I understand. YMMV, but I wanted to share this info. It would be nice if they would add a buzzer when it's time to take out the paddle, but not too hard to set a timer. I've used the Bob's Red Mill mixes for raisin and white bread so far and the loaves are bigger than the tiny ones you get from store bought GF loaves that cost a fortune anyway. This way I don't have to stock a bunch of different flours that are prone to go rancid. I still toast the bread before eating or making sandwiches, but I'm happy with it and it's quite easy using the mixes.

What I like: - If you never used a bread maker, probably you may find this one ok and in the top 20 brands. It was a big deal to me. - It has a transparent window to see what's going on with your bread (our old Panasonic was not having this feature, because the lid cover has a yeast dispenser on top). - In general, it makes a great bread if all the ingredients are fresh and you want a standard bread. - The bread recipient is a bit thin for a home appliance, or at least that's my impression. My old Panasonic was a lot more robust and I wasn't afraid to drop it accidentally, this one is really not that kind. - Overall it does not look flimsy or cheap, it actually looks good on your countertop in the kitchen. What I like less: - With older ingredients the baking was less tolerant, in my experience. I made several bricks in my first attempts. The same recipe that used to work well in our old Panasonic before it died did not work at all in this new machine a few weeks later. With new ingredients, it worked well. I guess it may have to do with the baking program in its computer. - The way the baking container is being attached is difficult to extract after baking. In a Panasonic you can just lift it with one hand, it twists then it's out. In this one you have to be strong to extract it with both hands and you got to be careful. My wife can't do this and that's one reason we used it very little until we decided to buy a new Panasonic several years later.

- The paddle attached to the bottom of the baking recipient is permanently mounted (or more correctly, we could not take it out like in the Panasonic model, for cleaning). Not big deal but it's nice to be able to easy clean the bucket at the end. - If you want to use the timer function, you have to put all the ingredients carefully, first the liquids then the solids, and then add the yeast on top to stay dry, or it would start to ferment if it gets into your composition. This is true for most models on the market and if you don't care, then it's not big deal. For me it was because in the old Panasonic model there is a special container on the lid that drops the yeast only when it starts the batch. If you just want to pour the ingredients and forget about the small details, especially when you're on the rush or semi-sleepy, that's worth the extra 20-30 dollars to spend on a model that does that. This was the second reason we decided to buy another Panasonic. There are no perfect bread machines and if they would be, probably they would be very expensive. This machine is a good one and I'd suggest if you buy one like this, try it at least for a few weeks either daily or every other day to understand what bothers you or not, then decide if you want to keep it or return it.It has proved to be a real solid workhorse and real easy to use. The only problems I have had have been sub-par bread on occasion due to my own fault--measured wrong, used the wrong ingredients, experimented. I have learned to be a little freer with the machine--adding a little water or flour in the initial stage if the dough is not the consistency I want, using different liquids, making my own version of things--e.g., pannetone, garlic bread. Once you learn the basics do not be afraid to vary ingredients and measurements to your liking. One trick I learned is to reach in and take the paddle out after the machine does its final kneading, right before the final rising and baking.

This way when you take the bread out you don't have to take the paddle out and leave a big hole; you just have the small hole from the spindle. Jerry So.Cal. 5.0 out of 5 stars If the machine doesn't work, then you have to give it a 1. But the machine i received works perfectly and so i have to give it a 5. So far i've made the Italian Herb Bread from the instruction manual and a whole wheat bread from Betty Crocker. The Italian Herb tastes awesome, so soft and moist, but it's not a perfect loaf. It rises very nicely in the pan, but once it starts to bake, the top sort of deflates and caves in. According to the manual, this may be due to either too much water or too much yeast. I followed the recipe perfectly with a digital scale, but i'm going to have to probably cut down on the yeast a little, despite the recipe's instructions. I used the timer for one of my loaves, and one of the bottom corners of the loaf had a high density of flour and seasoning(Italian seasoning). Some flour and seasoning can get stuck in the corner of the bread pan, so you should use a spatula and scrape it out during kneading if you can. That's the benefit of not using the timer. Despite the caving in of the bread and some flour getting stuck in the corners of the bread pan, i have to give this machine a 5. It works well. It cooks the bread all the way through. I have used only the medium crust setting so far and i am getting a medium crust coloring. The caving in of the bread has nothing to do with the breadmaker, but more with the recipe. And as far as the flour in the corners, well, that's not a huge issue. The bread tastes great and the smell is awesome. Cleaning up is pretty easy. Once you pop out the bread, you'll notice that the kneading paddle is stuck in the bread pan. The cooked dough kind of acts like a glue that keeps it in there, so all you have to do is put in some soapy water for about 5 minutes and it comes right out.

You'll get a little leftover bread remnants in the groove where the kneading paddle goes. I'm not sure how to clean this out. What i've been doing is taking a needle and scraping out the bread in that very thin groove. It gets some of it out. Noise? Nah, not much. And the machine hasn't moved an inch on my counter while kneading. While this breadmaker is still working i'll give it a 5. But the day it stops working, especially if it's in less than a year, i'll have to revise my rating. I hope I covered everything. ADDITIONAL COMMENTS: 2-21-11: I have now had this bread machine for a couple of months and I'm still excited about it so I wanted to update my review. This bread machine has actually inspired me to cook. The bread tastes so good, that I want to make some dishes that I can serve to people, along with the bread. I've let about 10 different people taste the breads I've made, and I've received nothing but great comments. 2 of them now want to buy a bread machine. For my 1st 2 loaves i used measuring cups for the flour and the liquid ingredients, and both of those loaves sunk during the baking cycle. For my 3rd loaf onward, i used a digital scale and used grams. It's so simple. Everything has a known weight. The 2 most important ingredients that must be measured carefully are the flour and the water. I tell ya, once i started using the digital scale, none of my loaves have sunk in at the top. As far as the bread machine, it still works perfectly. No defects after about 20 loaves of bread. If this one ever breaks, my next bread machine is going to have 2 kneading paddles. Why? As I mentioned in my initial review, flour gets stuck in the corners of the pan during the kneading cycle and you have to use a spatula to mix it with the ball of dough. It's not a huge deal because you'll still get a good loaf of bread, but probably not AS good as when all of the flour is mixed properly.

So i try to stay away from the delay cycle(since i'm not around to mix the dough in the corners). Since that is the only flaw, and probably the flaw of all one-paddle machines, i maintain the score of 5 I initially gave. The breads are so good. If yours don't turn out well, try a digital scale and use weight, not volume. UPDATED 12-4-12: Just wanted everyone to know that i still use this bread machine often and it still bakes a perfect loaf of bread. I have Silestone countertops, so I don't have to heed the warning to have something under the machine to insulate the countertop from the heat. The machine is quiet and does a great job of turning out beautiful loaves of bread. The only suggestion I have to those new to the machine: READ the manual, not just the very first page or two.

MY PROBLEMS WITH MACHINE: I've found that if I accidently bump the OFF button when checking the dough to see if all the dry ingredients have been stirred out of the corners or if I'm moving the machine over on the counter, the machine turns off and resets itself when turned back on to the very beginning - and I cannot get it back to the proper spot in the cycle it was in, which for me has been between the times it kneads the dough and lets it rise (think it does this three times).THEN I start the machine on the BAKE (only) cycle. BUT you'll note the minimum BAKE time is 1 hour which is too much. YOu can tell by smell and color also, but thumping is the way to tell. Refurbished Unit: No.Maybe it is a good refurb.). Ease of use: Ridiculously Easy. Bread Results: Perfect. Clean Up: A breeze! The first day I made a sweet bread out of a box that only called for room temperature water. The results were fine, but I was not impressed. I thought maybe it was the box mix. The bread was fine but not as voluminous as I expected it to be. Everyone in the house liked it, there was nothing wrong with the taste. Based on recommendations here I also ordered the Bread maker book and I can't wait to try new things. This machine is worth what I paid for it. I figure if I make 50-60 loafs this year it would have paid for itself. This little machine is a work horse and I am very pleased with it. So is the rest of the family. As usual Amazon's delivery was excellent. YUMMY! soft, tasty and left overs made great French toast for the family in the morning.
